Tomatoes are superstars when it comes to nutrition. Packed with the antioxidant lycopene and vitamins A and C, tomatoes are also fat-free, low in sodium and high in potassium. Tomato products such as catsup and pasta sauce are common on grocers’ shelves, but fresh tomatoes are even more popular. Served on sandwiches, stuffed, in a salad or sliced with a touch of salt, tomatoes are one of the most popular staples of a healthy diet.
Storage Tips: Store fresh (un-cut) tomatoes on a cool kitchen countertop away from heat generating devices, such as the stove or fridge, and away from sunlight. To freeze tomatoes, you can place the whole tomato directly in the freezer. When ready to use it, run under cold water to thaw.
